Forest Fed Pork
Our pigs come to us as piglets and live in the barn eating organic grain until they are big enough to take care of themselves out in the woods. As soon as they are big enough to fend off bears and coyotes our pigs head out to savannas a the foot of the mountain where they graze on grasses, forbs and grain. After the pigs have grazed the savanna for 3 months they head up the mountain to forest groves where they have all the acorns, walnuts and hickory nuts they can eat giving the meat a beautiful, rich flavor.
Some of our favorites over the holidays were fresh hams, breakfast sausage, and fresh bacon or pork bellies featured at the Brix farm dinner.
