The most important thing to remember when cooking grass-fed meat is not to overcook it. Due to its lower fat content than conventional meat, grass fed meat requires less cooking and lower temperatures. Our beef is best cooked rare to medium when grilling, if using a meat thermometer look for 125-145 degrees, and always remember the meat will continue to cook after you take it off the fire. Also, when grilling always be sure to thaw meat completely before cooking and always let the meat rest in a warm place for ten minutes after taking it off the grill, before you cut it. We recommend using olive oil and seasonings rubbed on the meat to enhance flavor and moisture. If you like well-done meat then try some of our slow cooking recipes in the crock pot, or try searing and roasting. Searing the meat over high heat to seal in natural juices and then finishing in the oven can work for steaks and roasts, and is a favorite method of many professional chefs.
