I went to the dinner on the 12th and have to say that I haven't enjoyed superior pork bellies ever, or found a more perfect wine to pair with them than a nicely acidic Barbera of very moderate barrel aging. I was happy to have seen, before, how the animals are raised, and even to share a bit of conversation with some of them. I'm afraid it can no longer be said, as a speaker did at that dinner, "A pig is a pig." I know I'd not care to hear this said of any of my friends.
